National Egg Month celebrates the egg as a versatile food used on its own and in dishes such as baked goods, soups, and casseroles. Eggs are also described as affordable, nutritious, and delicious, making them a flexible ingredient for meals throughout the day.

The observance has changed months over time. Event records place it in January from 1953 through 1956, March from 1957 through 1966, and for 31 days on an unknown date from 1967 through 1989. It has been observed in May since 1990. The Poultry and Egg National Board is identified with the observance in 1952, while the American Egg Board is identified with its May observance beginning in 1990. In a 1993 notice, the Journal of the American Dietetic Association reported that the American Egg Board had proclaimed May as National Egg Month.

The Poultry and Egg National Board was a trade association established in 1940 that provided nutrition information and promotional material about eggs, according to the U.S. National Agricultural Library’s description of the board’s records. Today, May offers a month-long opportunity to appreciate the egg’s many culinary uses.

How to Observe National Egg Month

Celebrate by enjoying eggs in a favorite meal, or try preparing them in a different way. Use eggs in baking, soups, casseroles, or another dish, and share your favorite egg creation with friends or family. You can also decorate eggs as a creative activity outside the Easter season.

When preparing dishes containing lightly cooked eggs, follow the egg-safety guidance to cook the egg base to at least 160°F.
