The holiday’s exact origins are unclear. The cookie’s history is also described differently: some accounts connect it to European shortbread traditions, while others point to similar cookies in medieval Arab cuisine. The Keebler Company registered “Sandies” as a brand name for its shortbread cookies in 1955, helping popularize the name and the pecan variety.
