National Raspberry Tart Day

Raspberry tarts are baked and eaten today on National Raspberry Tart Day. Tarts consist of a filling over a pastry base. Sweet tarts topped with fresh fruit are the most common. They have a creamy filling, such as custard, and a crispy crust base, usually made of a shortcrust pastry. A miniature tart is called a tartlet. Savory varieties are also made with cheeses, meat, vegetables, and eggs. These were more common in the Middle Ages, the time period that tarts date to and were particularly common with the nobility. But today the sweet raspberry version is the variety that is celebrated!
