According to one account, sea captain Ben Wenberg introduced Lobster à la Wenberg at Delmonico’s Restaurant in New York City. After a disagreement led to the dish being removed from the menu, the restaurant brought it back under the name Lobster Newberg, rearranging the letters of “Wenberg.” Chefs later created seafood variations using ingredients such as shrimp, frog’s legs, and crab; the crab version became known as Crab Newburg or Crab Meat Newburg. The spelling varies between Newberg and Newburg, and both forms appear in print and online cookbooks.
