Lemon bars, also called lemon squares, are eaten today on National Lemon Bar Day! They are a type of dessert bar with a thin shortbread crust and a lemon curd filling. Fresh-squeezed lemon juice is often used to make them. Other common ingredients include flour, butter, white sugar, eggs, and salt. Lemon bars are usually baked in an oven in a 9x13 baking pan, and then topped with powdered sugar.
The first widely published lemon bar recipe appeared in the Chicago Daily Tribune on August 27, 1962, although recipes in small local newspapers and community cookbooks predate it. A similar recipe was published in Betty Crocker's Cooky Book in 1963, which led to the proliferation of lemon bars across the country. Michael McCarthy, a British newspaper journalist and environmentalist, created National Lemon Bar Day in 2019 after he baked lemon bars for a fundraiser bake sale and many people had never had them before. He believed his new holiday would help familiarize people with them.
